Ham and Vegetables with Mastaccioli

A few weeks ago I spent some time cooking freezable meals for our friends who had just had a baby so that we could stock their freezer for them. We were really blessed by SO many friends who did the same for us that I wanted to return the favor. Here is one of the yummy recipes I made, courtesy of our family friend Diana. I hope it froze well! ;)



Ingredients:
  • 4 oz. mastaccioli
  • 2 C sliced zucchini or peas
  • 1/2 C sliced green onion
  • 4 tsp. cornstarch
  • 1/4 tsp. dried basil, crushed
  • 1/4 tsp. marjoram
  • 1 13 oz. can evaporated skim milk
  • 5 oz. cooked ham, cut into strips
Directions:
  1. Cook pasta re: pasta instructions
  2. In a medium saucepan, combine veggies, onions, and 1/4 C water. Boil and reduce heat. Simmer 4-5 minutes; drain and return to saucepan.
  3. Meanwhile, for sauce, combine cornstarch, basil, marjoram, and a little milk, 1/8 tsp. pepper. Stir in rest of milk. Cook and stir until thickened and bubbly. Stir ham, pasta, and sauce into veggies. Heat through.
